Ingredients
- Mrs Shah’s Curry Mix
- 1 teaspoon salt
- 2 tablespoons oil
- 1Â onion, finely sliced
- 200g large raw or cooked prawns, defrosted if frozen
- 400g can chopped tomatoes
- 1 garlic clove, finely chopped
- Large bunch coriander, leaves and stalks chopped
- Heat oil in a wok or large frying pan, then add the onion. Sizzle over a medium heat for approx 5 mins until golden brown, then stir in Mrs Shah’s Curry Mix, garlic and salt and stir for 1 minute. Stir in the prawns and chopped tomatoes, then bring to a simmer. If using raw prawns, simmer until they have changed colour and are cooked through. Then add the coriander and stir in and simmer for a further 2 minutes before serving with boiled rice and naan bread.
